Aquafaba Chocolate Mousse

aquafaba chocolate mousse

2-3 servings

ingredients

    • 50 g – 100% dark chocolate, melted
    • 22 g (1 tablespoon) honey, softened, or maple syrup, if vegan
    • 1 small pinch vanilla powder
    • 1 small pinch pink himalayan salt
    • 120 ml (1/2 cup) aquafaba (juice from a tin of chickpeas/beans)
    • 100% chocolate shavings, for garnish, optional


directions

mix together the melted chocolate, honey or maple syrup, vanilla powder and salt. set aside

place aquafaba in a medium sized bowl. with electric beaters, beat until thick and stiff peaks form (similar to when beating egg whites to make meringue)

gently fold the melted chocolate into the whipped aquafaba in three stages. transfer to serving dishes and chill for at least 4 hours
